Week 1, Day 3: Micro-salads



Today I'm shifting the blog entries by a day, so they will post a day early: Blogger sends automatic posts to email subscribers, but it sends them a day after the entry was posted.  We'll fudge our dates a little so we can get our support and inspiration email notifications on the correct day :-)

Pulse greens and veggies in a food processor for a few seconds to create a quick, easy-to-eat micro-salad.  Add some nutritarian dressing made with tahini, lemon/lime juice, freshly ground pepper and some fresh garlic (or garlic/onion powder) for extra flavor!

Micro-salads are great to make in advance and pack for work!  (Just skip the raw garlic in the dressing).  Pack the dressing separately and mix it in with the salad just before eating.  Throw some beans on top, finish off with a piece of fresh fruit, and you've got a nutritious and filling meal!
