Week 2, Day 10: Salad dressing


Blueberry-pomegranate salad dressing made with a splash of balsamic vinegar, POM (100% pomegranate juice), fresh blueberries and cashews.  I don't have a Vitamix (yet!), so the cashews didn't blend super smoothly the way they're supposed to, but the dressing was still tasty. 

After trying unsuccessfully to blend cashews with my not-so-powerful little blender, I started using pre-made nut butters from Whole Foods for my salad dressings: cashew butter, almond butter, tahini (sesame seeds butter), etc.  That's a good quick fix until I can get a Vitamix ... which may be a while!
