This summer I made popsicles from frozen pureed fruit. I pureed bananas, mango, raspberries, blueberries, grapes, cherries, watermelon and blackberries. I then mixed some of the pureed banana with unsweetened cocoa powder. I layered the purees in different mixes in each popsicle, and I also added a few small fruits like blueberries and raspberries in some of the popsicles. They ended up being a big hit at a pool party for both adults and kids ages 8 and 10!
These would also be great as a last minute dessert that can sit in the freezer for days and even weeks. Puree any over-ripe fruit like bananas and whatever else happens to be sitting around the house, mix some cocoa powder with the banana puree, and layer the different fruit purees in popsicle molds. Keep them in the freezer for a quick treat after lunch or dinner or for unexpected visitors.
