Week 6, Day 39: Cranberry sauce

Just before Christmas, I made a batch of cranberry sauce from scratch.  I boiled a bag of cranberries from Whole Foods along with 9-10 chopped medijool dates, also from Whole Foods.  I simmered the mix until the liquid got reduced somewhat, I let it cool down, then I blended it.  The result was this smooth, pudding-like cranberry sauce that was not to sweet and still nice and tart.   

I find the sweetness from medijool dates to be just enough for all my desserts and anything sweet I want to make.  This is a great tip from Dr. Fuhrman!
