Eat lots of cooked mushrooms, and eat them every day! Mushrooms have anti-inflammatory properties, they support the immune system, and they protect against all cancers. Check out Dr. Fuhrman's articles on the benefits and properties of mushrooms here and here!
These are some of the many varieties of mushrooms I found at my local Asian supermarket: enoki mushrooms (top left), brown beech mushrooms (top right), white beech mushrooms (bottom right) and oyster mushrooms (bottom left). I find mushrooms to be incredibly beautiful, and I could photograph them all day long!
I also love dried black fungus mushrooms, which become almost crunchy when added to a soup, such as veggie miso soup, and dried portobella mushrooms, also from Asian supermarkets where they are less expensive than in a regular supermarket.
