Week 4, Day 24: Merry Christmas!

Merry Christmas, everyone!  My favorite holiday of the year is here!  A happy, healthy day to you all!

One of the items on the menu for our ETL Christmas dinner this year is the butternut squash.  I love it roasted in the oven for about 30-45 minutes at about 350deg, when the house starts to smell like the holidays!  I even roast the seeds, the entire tiny handful that one butternut squash yields.  They're delicious toasted in the oven for about 10-15min after you coat them with some lime juice and a mix of paprika and a dash or two of cayenne pepper for some kick.  Yum!
