Week 4, Day 23: Roasted bellpepper

I love roasted veggies!  Especially roasted bellpepper, which I now roast directly on the open flame of my stovetop.  This is a super fast method, and it makes my house smell amazing!  I peel off the charred skin, remove the core and seeds, and then pull the meat of the pepper into strips, and eat them as a side dish.  You can add a bit of olive oil and a pinch of salt (which is not very ETL, but it's a nice treat once in a while - or it could work well with some flavored vinegar, too), some roasted or raw mashed garlic to it, and it's divine!  My mom and I are going to have this for Christmas, and she's making it this year :-)
