Week 3, Day 20: The nutritarian Elvis dessert


The other day, I was craving something sweet and more decadent.  All I had around the house that was very sweet was a ripe banana.  Now, I don't like bananas that are too ripe.  Not even when I'm craving something sweet. 

So I got creative: I cut the banana in half, then sliced one half in two lengthwise, and I grilled it lightly in a small pan on low to medium heat.  The banana carmelized very nicely.  Then I took a small amount of raw almond butter (I buy mine organic, from Whole Foods), and I spread it on the grilled banana.  It doesn't look very polished, but it tasted super yummy and flavorful, and it took care of my sweet tooth.  It was very satisfying!

For some reason I was thinking of Elvis Presley and his famous banana-peanut butter sandwich, which apparently was one of his favorite foods.  But that involves bread, peanut butter and actual butter ... and, according to some, even bacon!  This is my own vegan and nutritarian version of the Elvis dessert.

In addition, according to Dr. Fuhrman, "almond and cashew butters are healthier alternatives to peanut butter, which has been recently reported to contain acrylamides, a dangerous carcinogen. This is an important reason why roasted nuts and roasted nut butters should be avoided".  I honestly do not miss peanut butter, and I find that raw almond butter and raw cashew butter both taste just as satisfying to me as peanut butter used to.
