Week 3, Day 21: Small plates


I have a confession to make: I don't like to cook.  So most of my meals are either dishes that I can cook fast, in bulk, like soups and stews which can last for up to a week, or they are quickly assembled meals.  I like assembled meals because then I can eat small amounts of a variety of fruits, veggies, beans, lentils etc.  And I like the way they look much better, which makes them even more appetizing to me.  And I actually end up eating more fruits and veggies this way sometimes!

I sort of use the 'bento box' concept, except I end up with a tray full of small plates and bowls with pieces of whatever appeals to me in the moment.  Like the small plate below: freshly sliced tomatoes and avocado on a bed of lettuce with a garnish of basil.  Sometimes I sprinkle ground flax seeds or chia seeds on top, or some freshly ground black pepper. 

I mean, doesn't this look just beautiful and so fresh?
